I’ve spent a lot of time thinking about how to make single parent family life easier and better. Two years and one month of thinking to be exact! It’s a lot of what I write about here on the blog. I wanted to use the month of May to highlight my best tips and tricks – one each day. (And as always: the thoughts, opinions and tips of not-single parents is completely welcomed!) Here goes…!
#1: One-pot meals.
Cooking “one-pot” meals makes dinner so much easier. And minimizes time doing the dishes! These aren’t the gourmet meals that took three hours to make of my past life – but these seven recipes are tasty and satisfying staples and easy to make. Some of the recipes might seem to call for more than one pot – I promise you that all of these can be made successfully with only one pot! We are fans of raw zucchini and purple cabbage on the side lately. And often a piece of toast with butter and nutritional yeast sprinkles!
