31 single parent tips in 31 days. #1: One-pot meals

I’ve spent a lot of time thinking about how to make single parent family life easier and better. Two years and one month of thinking to be exact! It’s a lot of what I write about here on the blog. I wanted to use the month of May to highlight my best tips and tricks – one each day. (And as always: the thoughts, opinions and tips of not-single parents is completely welcomed!)  Here goes…!

#1: One-pot meals.

Cooking “one-pot” meals makes dinner so much easier. And minimizes time doing the dishes! These aren’t the gourmet meals that took three hours to make of my past life – but these seven recipes are tasty and satisfying staples and easy to make. Let me know what you think – and let me know your own easy favorites in the comments section!

Mustard roasted chicken and sweet potatoes

Easy Peasy split pea soup

Sardine pasta

Pasta with peas and ham

Creamy lemon chicken kale soup

Slow cooker quinoa, chicken, kale soup

Turkey chili

Some of the recipes might seem to call for more than one pot – I promise you that all of these can be made successfully with only one pot! We are fans of raw zucchini and purple cabbage on the side lately. And often a piece of toast with butter and nutritional yeast sprinkles!
